Few things excite seafood lovers like Spot Prawns (although they are technically shrimp). Their shells are a pale orange that almost “glows” from within, and their snowy white flesh is almost as firm and as sweet as lobster. For this reason, Spot Prawns are often used in sushi as “amaebi” (sweet shrimp), but they can also be enjoyed in a wide variety of preparations such as pan-sauteing, grilling, and in pastas and paellas.
