This artisanal cow's milk blue cheese is aged for 2-4 months in natural stone cellars underneath the dairy in Asturias. The wheel has a lightly mottled natural rind. The ivory paste is soft and creamy with light blueing, slightly "spicy", but light on the palate. La Peral pairs nicely with red wines, Port and Spanish dessert wines.
