Mortadella is made of finely hashed high quality pork sprinkled with cubes of fat, to which shelled pistachios and black pepper are added. The mixture is stuffed into a casing and cooked in a brick oven. The result is a remarkably smooth, soft, almost creamy texture and a unique ham-like flavor. Enjoy it thinly sliced on its own, in sandwiches or mixed into scrambled eggs.
