A very ancient cheese with origins dating back to 1277, about the same time as Gorgonzola. A semi-hard, semi-fat blue cheese made from cow's milk with a small mixture of sheep and/or goat's milk. Aged 2-5 months to get the characteristic flavor, it is dense with no open holes tending towards a grainier, crumbly texture.
