Manchego is made only from the milk of the Manchega sheep that graze in the Spanish provinces of Albacete, Ciudad Real, Cuenca and Toledo. It is a buttery, aromatic cheese featuring a floral start and a nutty finish. The best cheese is produced when the milk is the richest, between August and December.
