Osso bucco is a thick cut disk of leg meat with a portion of bone in the middle. It has a lot of flavor, but must be slow cooked to become tender. Elk Osso Bucco takes significantly longer to cook than other Osso Bucco, so sous vide braising is a great option. Elk Osso Bucco works with a wide variety of cuisines.
Elk is a very flavorful game meat, similar to beef, but with a clean, slightly sweet taste and distinguished by its deep red color. It is a healthy alternative to conventional beef as it's very low in fat and cholesterol and high in zinc and iron. Free range, 100% vegetarian feed, no hormones or antibiotics. Because Elk is so lean, it will cook faster than beef.
