Ubriacone is an affectionate Italian terms for "the great big drunk". A delicious cow's milk cheese that's bathed in a mixture of local Clinton and Rabasco wine, then pierced like a gorgonzola to let the aroma and flavor of the wine permeate the cheese. The paste is pliable with a slight crumble; it is visually stunning with its purple striations, but also has a rich nutty flavor that is quickly followed by a bright winey finish. The cheese is covered in grape leaves so that mold will not grow in the holes as it ages.
