Veal Sweetbreads are an offal cut, the tender thymus glands from the throat. They are considered a delicacy, prized for their mild flavor and creamy texture. The sweetbreads must be prepped properly before cooking; following prep they can be grilled, poached, roasted, braised, or breaded and deep fried.
Veal is the tender meat of young cattle and is considered a delicacy in many cuisines. Le Quebecois grain-fed veal is not the same as "pale veal"!
