A whey cheese produced from raw, sheep's milk. Since it is rich in protein and amino acids, it is easily digestible and a must in many peoples' diets. Ricotta di Pecora tastes excellent by itself but is more delicious if sprinkled with sugar or honey and Vin Santo dessert wine. It also goes well with seasonal salads and fresh vegetables seasoned with extra virgin olive oil.
