This exotic semisoft cow's milk cheese has been aged in ashes to preserve it, as per Venetian farmers' tradition. Today, the ashes include nutmeg, cloves, anise, cinnamon, licorice, and fennel, aromatized with truffle oil. The cheese itself contains black truffles adding subtle dimension to its flavor.
