The Veal demi-glace adds depth to the rich, sweet flavor of Venison, then the juniper berries, green peppercorns and red wine come together to create a truly distinctive sausage. Use this to bring robust game meat flavor to almost any dish -- grill for sandwiches, slice for soups, rice dishes and as a pizza topping or remove the meat from the casing for delicious meatloaf, sauces and fillings. The grinding of lean, dark Venison serves as a tenderizing step in preparing it as a sausage. Fattier cuts of beef are included in the grind to increase tenderness and provide moisture when cooked.

Venison (deer meat) is lean, naturally tender and darker in color than beef with a sweet, robust flavor. Farmed venison is much more tender than wild venison and without its intensely gamey flavor.
