Poulet Rouge (aka Red Bro Nu or Red Heritage Chicken) are renown for their full flavor. Heritage breeds are slower growing than conventional chicken, resulting in a far more delicious bird. They can be roasted whole or portioned into legs, thighs and breasts to grill, pan-roast or sauteed. Poulet Rouge tend to be much leaner than conventional chicken so longer cooking at lower temperatures is recommended to break down the muscle fibers. Raised free range with a 100% vegetarian diet. No antibiotics, hormones or growth stimulants. Air chilled for better flavor and marinade absorption.
