Cut from the marbled uppermost section of the Sirloin, the Rump Cap (Culotte) is also known as Round Sirloin Tip or Sirloin Cap Steak. It is tender and flavorful with a coarse grain. Best grilled or roasted. Cut across the grain into steaks, or cut into cubes for kebabs or stew meat.
